First Course
Tagliatelle ai Porcini, Etna recipe.
An unusual mushroom pasta from the Mount Etna region, which is covered in chestnut woods at medium elevations and filled with mushrooms.
Unlike northern Italian recipes, the mushrooms are cooked in a freshly made red chili pepper sauce and then coated in melted sheep cheese.
Wine: Nero d'Avola, the quintessential Sicilian red.
Second Course:
Salsicce alla Siciliana.
Veg sausages cooked together with potatoes in a tomato gravy and red onions with very unusual spices (which from the point of view of peninsular Italy would be blasphemy!)
Wine: Nero d'Avola
Dessert:
Crespelle (Italian style Crepes) with figs preserve
Wine: Sicilian Marsala (Florio Riserva)
