Moroccan tagine

12-24-2014 Wed. mild, rain. 


BREAKFAST --- coffee with Bailey's | cheese and bread | scrambled eggs with Chinese sausage | apple | mandarin | grapefruit juice 
LUNCH --- steamed shao-mai | various tofu snacks 
AFTERNOON-TEATIME --- roasted watermelon seeds | tea 
DINNER --- Moroccan tagine, stew of Chilean sea bass, sea scallop, carrots, fennel, pearl potatoes, olives, and shallots in white wine, lemon juice, olive oil, with chermoula ( paste of lemon, dried pepper, cilantro, garlic, olive oil, cumin, pimenton, salt and pepper)  | sauteed red pepper, leek and beech mushroom | seasoned quinoa | daikon and apple salad | olives and gigante  bean salad  | wine 












 
  • Christmas eve family dinner,  very well received.

DINNER --- potato and seafood stew | French green lentils with vegetable ragu | wine

DINNER --- butternut squash and apple soup | cioppino seafood stew with sofrito sauce ( crab meat, squid, cod and lobster claw ) | sourdough bread | sauteed Japanese mustard greens | wine

LUNCH --- rice with stewed wheat gluten and winter mushroom
AFTERNOON-TEATIME
--- apple
DINNER --- ( at K. T. Bistro ) baked oysters with Gruyere cheese and sweet chili sauce | shrimp mushroom gnocchi | duck breast with orange, with vegetables and mashed potato | bouillabaisse: Corvina Fish, Shrimp, Scallops, Mussels, Clams, Boiled Potatoes, Leeks, Saffron Fumet, and Crostini rouille | wine | Crème Brulee | chocolate mousse | muscatel dessert wine













  • only the duck breast was cooked just right, rest of the food were not in the school of fine cooking, old or new.

LUNCH --- black corn chips with guacamole | stew of ptoato, scallops, pepperoni in red pepper sauce | white wine
AFTERNOON-TEATIME
--- green tea
DINNER --- tomato and corn soup


  • heavy breakfast and lunch for the guests. dinner is a simple vegetable soup.
