citrus, herbs, slow-cooked cod for another new year Nowruz

WHAT'S COOKING --- NYT RECIPE: Slow-Cooked Fish with Citrus and Herbs 


prep
3 leeks,  1 lemon, 1 mandarin, 
fresh dill, tarragon, 
6 garlic, saffron
cod fillet lightly salted and marinated

leek, citrus, garlic, herbs sauteed in olive oil stovetop 
transfer to baking pan, bury fish in between 

add more herbs and saffron water on top 

bake 300 degree 30 min 

serve with saffron basmati rice 
and cucumber with  mint yogurt 



homemade baba ghanoush with pita 
Mexican black beans with onion and tomato 


zucchini fritters 

homemade Shanghai steamed dumplings 
tofu soup with wood ear,
mountain yam noddle knot, tomato and mushroom

pan-fried pork cutlet, mustard greens 

Northern Chinese chive pockets

  • the whole process takes a day, but not much actual work, just let the time to do the trick

BREAKFAST --- coffee
LUNCH --- rice with eggplant 
AFTERNOON-TEATIME --- apple | Chinese mountain walnuts
DINNER --- stir-fried chive flowers and smoked tofu with fermented black beans  | simmered napa cabbage, shiitake mushroom,winter bamboo shoot, rolled tofu skin and beef | tong-hao porridge | rice | wine

slow-roasted and chilled duck breast

BREAKFAST --- coffee
LUNCH --- apple
AFTERNOON-TEATIME --- tea | sweet rice dumplings
DINNER --- yam noodle soup with napa cabbage and wood-ear |  stir-fried chive flowers and smoked tofu | marinated, roasted and chilled duck breast | rice | wine 



 
  • duck breast is marinated, slow-roasted at 170  and chilled.

New Year's Eve special: Caviar, Cassoulet, Goat-cheese mousse

--- coffee baileys | grapefruit | croissant
AFTERNOON-TEATIME --- green tea | tangerine
DINNER --- smoked salmon and smoked salmon roe caviar, served with creamy mustard sauce, watercress, and radish | cassoulet : slow-baked pinto beans, duck confit, smoked bacon and sausage | dessert: goat cheese mousse with fried bread crumbs, balsamic dried cherry compote, tangerine and lime granita | wine

  • duck confit cassoulet is an extreme example of slow-cooking, a whole process of several days of patient reduction of ingredients into concentrated flavors and tender creamy but not mushy textures
  • the desserts ( recipes from Del Posto) play salt, olive oil, balsamic vinegar with honey, fruit, and sweetened goat cheese and cultured cream.
