Matsutake is a big deal of the season!

DINNERS --- matsutake mushrooms 4 ways:  oven grilled with soy, pan-fried with brown butter, steamed with rice, clear soup with silk gourd | Chinese taco with twice-cooked pork, caramelized onion and green onion | shrimp and mustard green wonton | Chinese garlic scape with sliced pork |steamed egg custard with seaweed seasoning | parboiled tong-hao greens | sweet and sour lotus root | home baked 24-hour no-knead bread  
(at Zaytinya DC ) puffy bread and dips and spread | Greek cured fish roe | spinach roll with phyllo pastry | biased  lamb shank | smoked mushroom | herb cocktail

DINNER --- broiled lamb chop with homemade spice rub | sauteed mustard green | besmati rice | matsutake steamed egg custard | wine
