- 1/2 cup sliced fresh winter bamboo shoots
- 1/2 cup sliced fresh winter shiitake mushrooms
- 1/2 cup snow peas
- 1/4 cup fresh ginkgo nuts, roasted ( or poached) and shelled
- 1 tsp dried shrimp ( revived by soaked in rice wine)
- 1 tsp minced ginger
- 1 small shallot, finely chopped
- 1 tsp tbs mild soy sauce
- 2 tbs rice wine
- 1 tsp cooking oil
- 1 pinch of sugar
- 1 pinch of salt
- add oil to a pan, add shallot and ginger, cook over medium heat till golden
- add shiitake, add rice wine and soy sauce, saute for 2 minutes till soft and fragrant
- add bamboo shoots, snow peas and ginkgo nuts
- add dried shrimp, salt, sugar and 1 tsp water, stir and saute for 10 minutes
