Sautted bitter melon with fermented black beans




  • 2 medium sized bitter melons
  • 1 tsp fermented black beans
  • 1 tsp mirin
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • salt
  • 1 tsp cooking oil

  1. cut the bitter melon lengthwise in half
  2. use a spoon to remove the soft seedbed inside
  3. cut the melon into thin slices
  4. heat cook oil in a pan over medium heat, add fermented black beans, fry for 1 minute
  5. add bitter melons to the pan, add salt, mirin, stir and saute till the melon soft and translucent green
  6. add sugar and rice vinegar, stir and cook for another half of a minute, remove from heat, serve hot
