- 2 medium sized bitter melons
- 1 tsp fermented black beans
- 1 tsp mirin
- 1 tsp rice vinegar
- 1 tsp sugar
- salt
- 1 tsp cooking oil
- cut the bitter melon lengthwise in half
- use a spoon to remove the soft seedbed inside
- cut the melon into thin slices
- heat cook oil in a pan over medium heat, add fermented black beans, fry for 1 minute
- add bitter melons to the pan, add salt, mirin, stir and saute till the melon soft and translucent green
- add sugar and rice vinegar, stir and cook for another half of a minute, remove from heat, serve hot
