DINNER --- fish bone broth and tomato soup | simmered kale | caramelized carrots with parsley and cilantro | rice | wine

sailing back to Spain

9-01-2013 Sun. hot, sunny.  


WEEKEND BREAKFAST --- coffee | croissant | bread | cheese | watermelon | grapes  | strawberries 
AFTERNOON-TEATIME ---  tea 
DINNER --- yellow tail sashimi with lightly pickled watermelon rind and avocado | toast with romesco sauce ( smoked nora pepper, roasted tomato, garlic, and onion) and fried egg | caramelized carrots wit cilantro and bacon | miso-marinated and pan-fried rock fish filet | rice | soup of fish head and tofu | salad | cava  wine
















 
  • fish is very fresh,  the fish soup looks like milk. 
  • romesco sauce has the original ingredient of nora pepper this time.

fillet yellowtail snapper

AFTERNOON-TEATIME --- tea | lotus seed candy
DINNER --- Italian bread | fish collar soup with silken tofu, wood-ear and kaffir lime leaves| pan-fried fillet yellow tail snapper | stir-fried flat leaf chives with fermented black beans | wine

  • fairly big fish over two pounds, fillet and deboned using the new Japanese fish knife, cooked in three ways: collar and bones into soup, top part into ceviche, rest of it into pan-fried fillet. yellow tail snapper is not yellowtail usually served in sushi, the fish is flaky but not with high oil content.
