- fairly big fish over two pounds, fillet and deboned using the new Japanese fish knife, cooked in three ways: collar and bones into soup, top part into ceviche, rest of it into pan-fried fillet. yellow tail snapper is not yellowtail usually served in sushi, the fish is flaky but not with high oil content.
