- Chilean sea bass steak or fillet
for marinade sauce:- 1 tbls fresh ginger (finely chopped)
- 2 tbls sake
- 5 tbls miso
- 1 tbls soy sauce
- 1 tsp coarse sea salt
for teriyaki sauce
- 1 tbls sugar
- 4 tbls sake
- 4 tbls mirin
- 4 tbls soy sauce
- rub the sea salt into the fish
- mix ingredients for the marinade sauce
- marinate the fish in the sauce in a sealed plastic bag for a day
- prepare teriyaki sauce: mix ingredients in a saucepan and bring to a boil, over medium heat till sugar is dissolved and the sauce thickened.
- preheat a cast-iron skillet in the oven to 450 degree
- dry the fish with paper towel, coat the fish with the teriyaki sauce
- put the fish in the hot cast-iron skillet and return the skillet to oven
- turn the oven to broil to broil the fish till slight brown, about 15 minutes
- garnish the plate with pickled ginger or sliced turnip, serve hot
