Teriyaki Sea Bass



  • Chilean sea bass steak or fillet
for marinade sauce:
  • 1 tbls fresh ginger (finely chopped)
  • 2 tbls sake
  • 5 tbls miso
  • 1 tbls soy sauce
  • 1 tsp coarse sea salt
for teriyaki sauce
  • 1 tbls sugar
  • 4 tbls sake
  • 4 tbls mirin
  • 4 tbls soy sauce

  1. rub the sea salt into the fish
  2. mix ingredients for the marinade sauce
  3. marinate the fish in the sauce in a sealed plastic bag for a day
  4. prepare teriyaki sauce: mix ingredients in a saucepan and bring to a boil, over medium heat till sugar is dissolved and the sauce thickened.
  5. preheat a cast-iron skillet in the oven to 450 degree
  6. dry the fish with paper towel, coat the fish with the teriyaki sauce
  7. put the fish in the hot cast-iron skillet and return the skillet to oven
  8. turn the oven to broil to broil the fish till slight brown, about 15 minutes
  9. garnish the plate with pickled ginger or sliced turnip, serve hot
