an adventure with chestnuts

WEEKEND BREAKFAST --- coffee | toast | fruit 
AFTERNOON-TEATIME --- tea
DINNER ---  rice with fresh mountain chestnuts | lamb chop stew with daikon and carrot | parboiled pea leaves with dashi broth and sesame seeds  |  pan-fried plantain | mocktail  


Italian chestnut knife 
cut X and boil in water for 10 min.
peel... when they are very hot 
steam with rice and kunbu 









  • when the nuts remain hot, it is possible to peel both  inner and outer shells together.
  • procedure: cut x on the bottom of chestnut, boil in hot water for 15 minutes. keep them in  hot water and peel off the hard shell. Reboil in small batches to heat the inner skin shell to remove it.
