How green is my tomatillo sauce

1-13-2010 Wed. barely above freezing (daytime), cloudy

BREAKFAST --- coffee | Pocky pretzel stick
LUNCH --- steamed buns with mustard green and mushroom fillings
AFTERNOON-TEATIME --- Wulong green tea | clementine | apple
DINNER --- egg and tomato soup | roasted Japanese white sweet potatoes | spicy and sour bean sprouts | Pennoni regati with green sauce of tomatillos and chilies serranos (Salsa verde) | fresh ginger sauteed shrimp | red wine

  • Tomatilllos look like green tomatoes, but in fact they belong to gooseberry family. Salsa verde ( Mexican) is a mixture of roasted tomatillos, chilies serranos, garlic, white onion, and raw cilantro. The sauce is green in color and refreshing in taste.

Tomatillo sauce (salsa verde)

  • 4 tomatillo, husk removed
  • 1/4 cup cilantro, chopped
  • 1 white onion, chopped
  • 1 hot green chili, seeds removed
  • 1 clove garlic
  • 1 tsp olive oil
  • salt

  1. roast tomatillo in oven, till soft and a little burned on skin, about 30 minutes
  2. remove the skin and core from the cooled tomatillo, drain liquid
  3. put tomatillo in a food processor, add the rest of the ingredients, puree till smooth
  4. add the green sauce to just cooked long grain rice, mix and serve
