Matsuzaka soup noodles


  • 1 bundle Matsuzaka noodles
  • 1 green onions, chopped finely
  • 1/2 cup snow pea leaves
  • 1 winter shiitake mushroom
  • 5 pieces shrimp
  • 5 pieces wood-ear fungi, revived by cooking in hot water for 30 minutes
  • 1 cup kombu bonito dashi
  • 2 slices pickled radish

  1. boil the water in a big pot and add dried noodles, cook like pasta, till the noodle is al dente
  2. simmer the wood-ear, shiitake and shrimp in the dashi soup stock for 5 minutes
  3. add pea leaves and green onion to the soup
  4. in a big bowl, arrange the cooked noddles at the bottom
  5. pour the hot soup over the noodles, arrange the mushroom, pea leaves, wood-ear and shrimp in the bowl
  6. put the pickled radish in a small bowl as a side dish
  7. serve hot
