Matsuzaka noodles and mackerel- pomegranate gives subtle tangy kick to oysters, a trick learned from a restaurant in Oslo. Mackerel adds smoky flavor to the soup noodle. Ed joined us and enjoyed food and drink.

- Matsuzaka is famous for its beef. These "matsuzaka noodles "(松阪刀削面) are excellent as well. they look like long ruffled ribbons, about half of inch wide and quite thin in thickness. Cooked in the dashi broth as soup noodles, they hold the shape with a bouncy texture.

- 1 bundle Matsuzaka noodles
- 1 green onions, chopped finely
- 1/2 cup snow pea leaves
- 1 winter shiitake mushroom
- 5 pieces shrimp
- 5 pieces wood-ear fungi, revived by cooking in hot water for 30 minutes
- 1 cup kombu bonito dashi
- 2 slices pickled radish
- boil the water in a big pot and add dried noodles, cook like pasta, till the noodle is al dente
- simmer the wood-ear, shiitake and shrimp in the dashi soup stock for 5 minutes
- add pea leaves and green onion to the soup
- in a big bowl, arrange the cooked noddles at the bottom
- pour the hot soup over the noodles, arrange the mushroom, pea leaves, wood-ear and shrimp in the bowl
- put the pickled radish in a small bowl as a side dish
- serve hot
