chestnuts, short ribs and lamb shank for Thanksgiving

DINNERS --- Afghan cooking:  ashak ( dumplings with flat leaf chive filling and yogurt sauce ), qabili pilau ( baked rice with lamb shank and carrots, resin)  | Chinese cooking: simmered pork short rib with small Chinese chestnuts in soy and fie spices | home baked orange and dates bread | clam chowder soup | caramelized carrots with parsley, cilantro and Canadian bacon | parboiled spinach | pasta with asparagus and shrimp | Korean style grilled beef short ribs

ashak at home

7-12-2017 Wed.  


 DINNER --- guacamole | salad | homemade ashak, Afghan dumplings with kale, dill and green onion filling,  with mince lamb and yogurt sauce topping | sauteed greens  


 
  •  finely chopped young kale leaves mixed with fresh dill  make good fillings for this dumpling dish

DINNER --- Ashak : Afghan chive dumplings with vegetable yogurt sauce | wine




  • experiment with ashak without ground meat sauce, used onion, carrots, celery and smoked tofu instead.
