whole chicken three ways

9-18-2018 Tue. 


 DINNER ---  simmered Chinese eggplant with fermented fava bean sauce | parboiled pea leaves | threaded chicken with green pepper with Sichuan hot chili and peppercorn sauce 



  • chicken breast parboiled then threaded and mixed with sauteed pepper and Sichuan  mala sauce 
  • legs and wings done with soy braising yesterday.
  • the rest made chicken stock
