miso cured mackerel

DINNER --- miso-cured simmered mackerel | sauteed Chinese greens | simmered Chinese eggplant with fermented fava bean sauce | rice | wine

LUNCH --- steamed vegetable buns
AFTERNOON-TEATIME ---  tea
DINNER --- pressed sushi ( saba ) | sushi ( sweet shrimp, mackerel, eel )  | baked Japanese sweet potato fries | simmered Japanese pumpkin, grilled rice cake, snow peas, napa cabbage and taro toot in dashi broth | sauteed Chinese string beans with sausage | wine 













  • got chance to use all the nice serving pieces.

LUNCH --- leftovers
AFTERNOON-TEATIME --- apple 
DINNER ---toasted bread with roasted red pepper, olives, pickles and pickled mackerel | steamed egg with minced chicken | salad | wine




 
  • mackerel is smoked and pickled , well, like pickles.

Spanish mackerel, Shanghai style

3-23-2013 Sat. chilly, sunny.  


WEEKEND BREAKFAST --- coffee | homemade orange bread | apple | mango | orange juice
AFTERNOON-TEATIME --- tea
DINNER ---  Spanish mackerel, pan-fried and marinated with sweet soy and spice broth | sauteed bitter melon | tong-hao porridge | wine 




 cooked marinade:  ginger, shallot, star anise, sweet soy, rice wine, sugar

 soaking after frying

 briefly broiled before serving



 
  • frying is a bit messy, the resulted fish is satisfying. the marinade gives fish a smoked flavor.
