kakiage, second act of tempura in home kitchen

AFTERNOON-TEATIME --- tea
DINNER ---  kakiage tempura: carrot, red onion,Japanese sweet potato and shiso | shrimp tempura | tempura eggplant, mushroom and shisito | burrata salad 














  • tempura operation number two.  batter flour is a premix from local Japanese store, light and crispy style. 
  • notes:  cold batter mix right before frying.  mix should not be smooth. kakiage batter 1:1.4 , shrimp tempura 1:1.6.

Tempura and Ochazuke in home kitchen

DINNER --- tempura: shishito pepper, lotus root, eggplant, okra, bitter melon, shiitake mushroom, king mushroom , shiso leaves,  shrimp, baby squid tentacles , with dashi and grated daikon dipping sauce || beer ||  Ochazuke : rice,  umeboshi Japanese pickled plum, pickled kombu,  seaweed,  shiitake, shiso, sweet-soy-braised baby squid tentacles, with green tea  


















  • a feast, busy and fun.

WEEKEND BREAKFAST --- coffee  | croissant | bread and cheese | water melon | grapes 
AFTERNOON-TEATIME --- watermelon 
DINNER ---  tempura stuffed zucchini blossoms | wine and soy braised short ribs | sauteed mustard green with fermented black beans | salad | wine 









  • explored a new farmer's market, got much better squash blossoms, just right size and tight shape.

LUNCH --- rice with kao-fu 
AFTERNOON-TEATIME --- tea
DINNER --- baked Japanese sweet potato fries | truffle & chicken liver pate with baguette | cava || shishito and baby zucchini tempura | roasted matsutake mushroom with dashi broth | baked delicata squash stuffed with seasoned cracked wheat, roasted red pepper, chorizo, shallots and herbs | broiled Iceland lamb shop with spice-rub and marinate | braised leek |wine || homemade donuts 










 
  • a special meal with Sonia, precious time 
  •  donuts turned out rather good, beginner's luck ?

  • leftovers into new forms for the C-eve dinner. the orange bread is freshly baked.

DINNER ---  baked japanese sweet potato fries | rice crackers with Icelandic cheese and sliced apple | cava || butternut squash and apple soup | grilled eel and roasted red pepper | onion and carrot lacy tempura with ponzu dipping sauce | shanghai salsa ( smoked tofu, cilantro and roasted peanuts ) | pan-fried Brussels sprouts with lemon juice | seafood paella ( fish, shrimp, squid and green beans) | wine  | homemade clamentine tart | tea
