fresh morel mushroom paella

WEEKEND BREAKFAST --- coffee | croissant | bread and cheese | mango | raspberries  AFTERNOON-TEATIME --- tea
DINNER ---   paella : fresh morel mushroom, Spanish chorizo, mussels , shrimp, peas and shallots, with saffron and peminton sofrito sauce | steamed artichoke |  fennel salad | wine 








 
  • morel mushroom has somewhat bouncy chewy texture, does not shrink as much when cooked in broth. the flavor is subtle , not as pungent as porcini
