- branzino, whole fish with scales on. put on Thai basil leaves, rosemary sprigs, salt, pepper, drizzle of olive oil and cooking wine, then enclosed in a pouch made of foil. into the oven of 375 degree for 25 minutes. the fish is steamed in its own juice and is tender and flavorful.
