Peruvian green rice

12-23-2011 Tue. chilly, clouds.  


BREAKFAST --- coffee

AFTERNOON-TEATIME --- tea | toffee 
DINNER --- Peruvian green rice | braised duck | sauteed French green beans | sauteed red peppers | wine 



 
  • cilantro and citrus, broth from braising duck. still need to figure out the rice variety and how to prevent rice from falling apart.

LUNCH --- ( at  Cholo Soy, Mission district ceviche  | duck and seasoned rice | potato with cream sauce |  purple corn drink ( chicha morada )
AFTERNOON-TEATIME --- ( at Chantal Guillon, SF)  tea | macaron 
DINNER --- ( at Verbena, SF)  lamb terrine and toast with fermented tiny green beans and | salad ( dandelion greens, parsnip, apple, hazelnut, buttermilk ) | squid ink lumaconi pasta with scallops, sea urchin and yuzu | seafood stew ( broth: lemongrass , verbena, citrus , fennel, kalp ) | sourdough bread | apple candy cap cake with celery root ice cream and pomelo | wine 

















 
  • a log walk in SF. amazing Peruvian food in an office building hallway, and amazing squid ink pasta in Verbena.

LUNCH --- ( at PIO PIO, NYC) Ceviche mixto ( fresh corvina, shrimp, octopus, calamari, mixed with red onion, cilantro, rocoto hot pepper, served with sweet potato and Choclo corn) | Juanita's chicken ( one whole rotisserie chicken marinated in mama juanita's secret recipe ) | Parihuela ( traditional Peruvian seafood soup cooked with rocoto hot pepper and Peruvian beer )
AFTERNOON-TEATIME --- ice cream | coffee 
DINNER --- ramen noddles with bok choy and tomato | Japanese pickled vegetables |wine

DINNER --- ( at la Mar ceblcheria Peruvian in SF) Peruvian potato and yam chips with two dips | cebiche clásico : California Halibut in a classic leche de tigre with red onion,habanero, Peruvian corn and yam | causa casera: Yellow potato causa, artichokes, asparagus, avocado and tomato confit with basil cilantro oil | carne anticuchos : Grilled skirt steak, fried potatoes, Peruvian corn, spicy panchita and rocoto sauce | arroz jugoso: Prawns, clams, mussels, calamari, white fish and vegetables in a juicy arborio rice with a blend of Peruvian ajis | wine | chocolate sphere with ice cream filling and raspberry compote

  • la Mar in S.F. is the first outlet in US by Peruvian chef Gastón Acuri, interesting food with ingredients of seafood, Peruvian potatoes, grains and corns. the executive chef tonight is a young third -generation of Japanese Peruvian.
