fillet yellowtail snapper

DINNER --- Italian bread | fish collar soup with silken tofu, wood-ear and kaffir lime leaves| pan-fried fillet yellow tail snapper | stir-fried flat leaf chives with fermented black beans | wine

  • fairly big fish over two pounds, fillet and deboned using the new Japanese fish knife, cooked in three ways: collar and bones into soup, top part into ceviche, rest of it into pan-fried fillet. yellow tail snapper is not yellowtail usually served in sushi, the fish is flaky but not with high oil content.
